One of my favorite combinations is pesto and salmon. A little twist on this gold standard adds cream and pasta for a delicious and simple mid week pasta dish.
Ingredients
8oz Salmon
1/2 Cup Pesto
1 Pint Heavy Cream
1 Teaspoon Salt
1 Teaspoon Black Pepper
3 Tablespoons Sun Dried Tomatoes
Handful of fresh spinach
1 Pound Rotini Pasta
Steps
- Pan seer salmon in a lightly oiled pan for 2-3 minutes on each side.
- Flake salmon, set aside.
- Boil pasta, set aside.
- Combine pesto, cream, salt, pepper, sun dried tomatos in a sauce pan. Stir frequently on medium-high until thickened, about 5 minutes.
- Add salmon and spinach then turn off heat.
- Serve over pasta.
