What to do with cans of random stuff sitting in the pantry. Tonight's late night meal is "Pineapple & Baby Corn Chicken Kaeng Curry". It's amazingly good for something which was just thrown together at the last minute. This will be made again, but maybe with a little more spice.

Ingredients

3 Pounds Boneless Chicken
2 Potatoes, Cubed
1/4 Cup Fish Sauce
1 Onion, Chopped
1 Can Pineapple Chunks
1 Small Can Kaeng Curry Paste
1 Can Baby Corn

Steps

  1. Combine chicken, potatoes, fish sauce, onion and curry paste in a pot for 30 minutes on medium. Stir periodicly.
  2. Add pineapple chunks and baby corn and simmer for an additional 15 minutes.
  3. Serve
