Fried Chicken & Fried Zucchini PDF Print

The last time I had made fried chicken must have been back in 1995 when I made it with my mom following a recipe from a magazine. 13 years later, here it is again.

Ingredients

1 Whole Young Chicken, Cut into pieces
3 Cups Flour
3 Tablespoons Salt
3 Tablespoons Pepper
1 Tablespoon Red Pepper Powder
4 Eggs
2 Cups shortening
2 Zucchini, cut into strips

Steps

  1. Cut chicken and pat dry with a paper towel, set aside.
  2. Mix all dry ingredients in a bowl.
  3. Lightly beat eggs in a bowl.
  4. Drip chicken in egg mixture, dredge in flour mixture.
  5. Set chicken aside for 10 minutes.
  6. Do the same for the zucchini (hint: use a different batch of egg & flour for food safty reasons)
  7. Heat shortening in a 10" Cast Iron pan to 350.
  8. Fry chicken for 10-15 minutes per side.
  9. Fry zucchini for 1 minute per side.
  10. Lightly sprinkle chicken and zucchini with salt when it comes out of the oil.
  11. Let stand 10 minutes, serve.
