Spinach and salmon with a lime cream sauce. This would probably be $15 ordered at a restaurant, and they'll most likely overcook the salmon. This meal for two took about 15 minutes to prepare. Few other dishes are so simple and good on their own.

Ingredients

3/4 Pound Salmon cut in half
1 Pound Spinach
3/4 Lime
1/4 Red Onion, Chopped
1/4 Cup Cream
1Teaspoon Salt
1/2 Teaspoon Chili Pepper
1/2 Can Chicken Broth

Steps

  1. In a large pot, sweat onions until tender. Add spinach, chicken broth and 1/2 teaspoon salt. Continue to cook until desired consistency.
  2. Sprinkle 1/2 teaspoon salt and chili pepper onto salmon.
  3. Cook salmon in a lightly oiled pan. About 3-4 minutes on each side.
  4. Combine remaining salt, cream and lime in a pan and reduce.
  5. Serve
