The corner market had a shipment of fresh oyster mushrooms that looked incredibly tender and ready for my tummy. Honestly, this was my first time with fresh oyster mushrooms and I must say, mmmmmmmmmm...

Ingredients

2 Pieces Skinless Boneless Chicken Thigh
1 Teaspoon Oregano
1 Teaspoon Thyme
1 Teaspoon Parsley
1 Teaspoon Black Pepper
1 Teaspoon Salt
5 Ounces Oyster Mushrooms, Sliced
1/8 Cup Brandy
1/8 Cup Cream
1.5 Cup Water

Steps

  1. Cook chicken on medium heat in water, oregano, thyme, parsley, black pepper and salt until water evaporates. Continue to cook until chicken is caramelized on both sides.
  2. Deglaze pan with the brandy and mushrooms. Reduce by half.
  3. Add cream. Reduce by half.
  4. Serve.
