Chicken w/ Brandy Oyster Mushroom Gravy |

The corner market had a shipment of fresh oyster mushrooms that looked incredibly tender and ready for my tummy. Honestly, this was my first time with fresh oyster mushrooms and I must say, mmmmmmmmmm...
Ingredients
2 Pieces Skinless Boneless Chicken Thigh
1 Teaspoon Oregano
1 Teaspoon Thyme
1 Teaspoon Parsley
1 Teaspoon Black Pepper
1 Teaspoon Salt
5 Ounces Oyster Mushrooms, Sliced
1/8 Cup Brandy
1/8 Cup Cream
1.5 Cup Water
Steps
- Cook chicken on medium heat in water, oregano, thyme, parsley, black pepper and salt until water evaporates. Continue to cook until chicken is caramelized on both sides.
- Deglaze pan with the brandy and mushrooms. Reduce by half.
- Add cream. Reduce by half.
- Serve.
