Thai Chicken Yellow Curry |

Remember that seafood curry a few weeks ago? It was supposed to turn out a little like this. I can't say which I like more, but they're both yummy. The seafood curry was a little easier to make since all the little pieces were already cut up for me by the specialty store.
Ingredients
1/4 Cup Onion
1/4 Cup Garlic
2 Cups Coconut Milk
1 Cup Chicken Broth
1 Lb Chicken, Cubed
3 Tablespoons Yellow Curry Powder
2 Potatoes, cubed
2 Tomatoes, cubed
2 Tablespoons Oil
1/8 Cup Fish Sauce
Steps
- Preheat skillet on medium-high.
- Saute garlic and onion with oil until tender.
- Add all other ingredients.
- Simmer until potatoes are tender.
- Serve
