In the mood for something sweet but also wanted to keep my calorie count low for the day (I've been busy munching on Polvoron), I threw together a healthy dinner that satisfied the need for low calorie food and my sweet tooth. Here we have Ginger Honey Dijon Salmon. MMMMmmm....

Ingredients:

1 Pound Salmon Fillet, cut in half
2 Tablespoons Honey
2 Tablespoons Country Style Dijon Mustard
1 Tablespoon Ginger
Salt & Pepper to taste

  1. Preheat oven on broil 
  2. Finely mince ginger (the finer the better) 
  3. Mix honey, mustard and ginger. Place in small pot over stove on low to warm gently.
  4. Seer Salmon Fillet skin side down on a cast iron skillet on high for three to four minutes.
  5. Broil salmon, still in skillet, for five to seven minutes. Remember -- if it's done in the pan, it's overdone on the plate.
  6. Drizzle sauce over salmon at service.
  7. Serve
