Quinoa Stuffed Bell Pepper |

Once again I had left overs in the fridge. If they wern't used up, they'd go bad. Here's a stuffed bellpepper with South American quinoa, basil feta cheese, mushrooms and tomato. Yum!
Ingredients:
1 Cup Cooked Quinoa
1/4 Cup Sauteed Mushrooms
1/2 Tomato
1 Tablespoon "Tiger Hot Sauce"
1/2 Cup Re hydrated TVP
2 Bell Peppers
1 Tablespoon Basil Feta
- Grill the bell peppers over the stove to give the pepper a smoky flavor. Here, I used a propane torch -- it's faster.
- Heat and mix all other ingredients. Stuff into bell pepper.
