What to do with cans of random stuff sitting in the pantry. Tonight's late night meal is "Pineapple & Baby Corn Chicken Kaeng Curry". It's amazingly good for something which was just thrown together at the last minute. This will be made again, but maybe with a little more spice.

Remember that seafood curry a few weeks ago? It was supposed to turn out a little like this. I can't say which I like more, but they're both yummy. The seafood curry was a little easier to make since all the little pieces were already cut up for me by the specialty store.

This is my tried and true Beef Satay recipe. It's incredibly easy to make a head of time and always a hit at a backyard BBQ. When making 'en mass, it's completely OK to skip the skewers.

Meagan said that Panang Curry was her favorite dish and after making it at home, I must agree ... it is really good. This was the first time I had used a curry paste and it worked out well. It had a mush fresher flavor than the powdered variety. Curry paste isn't as cheap but for $0.50, it's cheap enough.

Maybe this isn't really Thai. I can't honestly say if it is or isn't, but WOW it's yummy. It's probably just as Thai as Taco Bell is Mexican. Whatever ... it took 20 minutes to make and I'll definitely do it again.
