Eggplant, one of the foods that I'm allergic to but it's so good when done right. I've had a craving for eggplant parmesan for the last week, but when touring the local Megamart I saw that fresh Mozzarella was on sale. This was too good to pass up, so here's a little twist on a very traditional Italian dish.

There's too much TVP in this kitchen and the many of online recipes that use TVP are a little too ... umm ... "hippie". I wanted something would encourage meat lover to search out second helping. Like they say, anything fried is good. Vegan Sweet & Sour Chicken, doesn't sound possible does it? Read on.

Once again I had left overs in the fridge. If they wern't used up, they'd go bad. Here's a stuffed bellpepper with South American quinoa, basil feta cheese, mushrooms and tomato. Yum!
