While cleaning out the freezer, I found a piece of flash frozen wild Alaskan salmon left over from my last purchase at the local hippie grocery store. This was a total surprise, I was going to go to the mega mart and this let me stay home for the evening. Yay!

Another tried and true side dish fit for a backyard BBQ party. Most people who aren't accustomed to mussels get squeamish but as soon as a few brave souls dive in, the cache quickly disappears. This easily scales up to any quantity from dinner for one to feeding a good sized crew of friends and family.

Spinach and salmon with a lime cream sauce. This would probably be $15 ordered at a restaurant, and they'll most likely overcook the salmon. This meal for two took about 15 minutes to prepare. Few other dishes are so simple and good on their own.

Food at Yuri's Night 2008 was a bit expensive for what was offered. A piece of chicken marinated in Chai for $10? Not in your life. The freezer had five pieces of sashimi grade Japanese scallops, half an avocado in the fridge and a wedge of lime. What to do? Hmmm ...

The local specialty store had an amazing sale on Wild Sockeye Salmon. It was deep red and at just under $7 / lb, couldn't be passed up. Something this special needs to be topped with creamy Hollandaise and served with fresh pesto on something just a little different.

Surf and turf with a 'tude... for one. New York steak, grilled Medium Rare. Pan seared scallops with lemon cream sauce. Feta, red onion, cucumber and olive salad.

Earlier today I went to Whole Foods to take advantage of their salad bar. On the way in, a two foot stalk of Brussels Sprouts was leaning up on display. Before a recipe had a chance of forming, I reached over, grabbed and said to myself "I want this one...". Now that I had an ingredient for a side dish, what would this be used to highlight?
On Tuesday, Christine told me about recipe for brined Turkey and this really got my attention. I had never brined anything before and wanted to give it a shot. On the way out of the produce department I saw a deep red fillet of wild salmon and realized there and then that this fish would be brined.
